SPLIT DRIED GINGER

Processing of Split Dry Ginger

After harvesting, the fresh ginger is conveyed to the factory where it is sorted, washed and sliced. When the fresh ginger is sliced, it is then moved into a mechanical dryer where it is dried under controlled temperature of 60oC to reduce the moist content to between 10% and 11%. Where there is sufficient sunlight, the split ginger is spread under the sun until the moisture content of 10% to 11% is achieved. The split dried ginger is then packed in 40Kg bags and stored in the warehouse for subsequent use.
